    We love trying out different places to eat, and this time we decided to try out a local place in Blue Springs; Casa Mexico. Christina loves Mexican food while Steve, not so much. Casa Mexico is a family Mexican restaurant located down 7 Highway. We were a huge fan of their homemade salsa and queso. I would highly recommend it!

    As a local in Blue Springs, downtown Blue Springs to be exact, I have found my few places to "hang" or recommend to those I know and others who pass by. One of my favorites hands down is Scout Coffee! I frequent the place so much, they know me by name. Plus the owner Jared is the sweetest guy. Everyone he has working for him are the best people.

    Now please do not let me forget to mention the coffee. Oh my goodness is it good! The flavors are unique, the food is really good and the choices they have for certain food sensitivities put them even further at the top of the list! Great place to meet friends or just have a walking place to land.

    Ever wondered how Blue Springs got its start? Well, other than being a great place to live, Blue Springs has some other characteristics that made pioneers decide to settle down here.

    Blue Springs was named by pioneers who found the area to be a perfect stopover due to the clean, clear, freshwater from a spring just off the Little Blue River. It began with a grist mill and grew since then. When it became the fourth settlement in its county, Blue Springs only had a population of 129 people! One hundred and forty years later, the population has grown by over 52,000 people. Talk about some growth!

    Pink Hill Park was our go-to park when we lived in Blue Springs. The equipment was clean and taken care of. Within Pink Hill Park is the BMX Park. B.S. BMX has been a part of the city since 1984. The track has a new gate and is really fun to ride. The season runs April through November.

    We love a great local spot. It's no surprise when I enjoy a visit that I share it with the rest of the world. Scout Coffee is located in downtown Blue Springs. Being an agent I sure thought it was quite clever to take an older home and turn it into a local social spot. Blue Springs locals seem to be aware that this new shop is a great addition to their community. With fresh made pastries, drip coffee and delicious chia tea or as they call it a hug in a mug. You won't be disappointed when you take one sip of your drink of choice.

    We took advantage of the snow day yesterday to try a local hidden gem! Bean Counter Cafe is located just off of 7 HWY inside Colonial Gardens! I went with several picky eaters and am pleased to say everyone was extremely happy, finishing every last bite. Each of us enjoyed something different, avocado toast and a hard boiled egg, the turkey-bacon-avocado wrap, the buffalo chicken panini and they were all amazing. I tried a lemon vinaigrette and to my surprise it was great, it's a must try if you like a light dressing! We will be going back for springtime to enjoy and try out the porch, which I heard is beautiful!!

They are such a big part of our community, they help with the in coming sixth graders to help pick an instrument that will fit them.
