We arrived at Paraiso's at noon on a Friday and were quickly greeted and seated. The chips and salsa quickly arrived as we were seated, and the drinks arrived shortly after. The first round of chips and salsa were complimentary. Additional chips would be an extra cost, which I wasn't a big fan of. The well-lit, open dining room offered booths and table seating and could also accommodate larger parties. The server was a young woman who was pleasant, yet never offered her name, and needed another server to serve my beers.We placed our order and added a side of queso to enjoy with our chips. The cheese dip experience ended up being mildly disappointing. It was clumpy and lumpy yet still tasty...slightly spicy. The top film should have been removed prior to being served, but it didn't affect the cheesy flavor. I was a little bummed after the cheese dip and complimentary chips disclosure, but my attitude quickly changed. Once I took the first bite of pork chili Colorado with green sauce and flour tortillas, my experience in the restaurant was favorable until we left. My beautiful bride, Michelle's experience was similar to her order of beef enchiladas which were properly sized and flavored nicely. The meat was fresh, not overcooked, and the sauces were flavorful. The beans and rice were fresh and not microwaved, and all the food was delivered quickly at perfect temps. Both meals arrived at the same time. No draft beers were available. The restaurant offered a discount when paid in cash. This was the only restaurant in Minneola we could find.
