Sandy’s is a friendly and casual breakfast spot in Blue Springs. The staff could not be kinder or more helpful. I ordered the veggie omelet, and it was a very generous portion, served with sourdough toast and a good-sized side of hashbrowns. The menu offers the classic breakfast staples along with lunch and dinner options, so there is something for everyone.The ambience is simple and not particularly decorative, but the atmosphere felt welcoming. The customers visiting that morning were friendly and seemed to enjoy chatting with one another, which made it feel like a true local gathering place. This is a solid choice for a hearty breakfast and warm service. Open Tuesday through Sunday, closed Mondays.
